Parippu vada... a snack for good times!!!

A classic snack among south indians .One of the  main reason being it doesn't suck up too much oil.All our friends love this dish and I make it often at home as a simple snack and elaborately if needed as Rasa vada (soaked in Rasam) .Its not a very complex to make and the ingredients are available in most of our kitchens

Recipe

Toor dal/channa dal           -  1 cup
Onion chopped                  -  1/4 cup
Red chilly powder              -  1-1/2 tsp
Asafoetida/heeng              -  1/4 tsp
Green chilly                         -   2-3 nos
Salt                                      -  to taste
Curry leaves                       -  a handful
ginger                                  - 1 small piece
Oil                                        -  For frying

Method

  1. Soak the dal for at least 4-5 hr.
  2. Chop onion ,green chilly, ginger and curry leaves
  3. In a blender add the soaked dal.and give it one or two pulse. If it can be blended without water that would be ideal. In case you are having difficulty with the blender, add a few spoons of water. You may see that some dal is not pulverized and that is fine. If dal is ground too much, the texture of the vadas would not come to be crispy.
  4. Now in a bowl mix up the dal mixture,chopped onion,green chilly, curry leaves, ginger, salt, red chilly powder, asofoetida and mix well with hands.
  5. Heat oil in a deep dish pan for frying (can use any vegetable oil or coconut oil)
  6. Once the oil is hot (not smoking hot) take the dal mixture between the palms and fry it in medium heat.
  7. Once golden brown remove from oil onto a tissue paper to remove excess oil before serving.
yield -20 medium vadas

Flaws that can happen.
Not Cripsy                                                          -      Dal was ground too much.
Soaked up too much  oil                                   -      More water added during grinding.
Golden brown outside but not cooked inside -      Vadas fried in high heat.. reduce to medium..patience will be rewarded!
